Mandam uses top-grade domestic freshwater eels, which are grilled in a Japanese-style Kabayaki method. The eels undergo several rounds of grilling and marinating in a special sauce, allowing the oil to drain and the sauce to seep in, creating a unique flavor. All sauces and side dishes are homemade using locally sourced ingredients.
